10 Tray Commercial Gas Convection Oven (LPG / Natural Gas) — GDR-10G
About professional convection oven
1. High-Volume Gas Baking Where Electricity Is Not an Option
The GDR-10G commercial gas convection oven is the gas-fired sibling of our 10-tray electric flagship. Same ten 400×600mm trays, same wet spray, same 80mm insulation — powered by an industrial gas burner that heats fast and holds temperature under continuous loading. Choose this oven convection gas model when three-phase electricity is unavailable, expensive, or your daily volume makes LPG or natural gas the cheaper energy source per batch.
Factory-configured for LPG or natural gas at order time; propane conversion on request. Electronics run on 380V/50Hz (0.8 kW) for the fan motor, control panel and safety systems.
2. Bake Bread and Cake in the Same Oven
The GDR-10G is engineered as both a convection bread oven and a cake convection oven — the wet spray delivers the humid opening phase that artisan bread crust requires, while adjustable airflow and PID temperature control give the gentle, even bake that layer cakes and sponges need. Adjustable side outlets let you dial airflow up for sourdough or down for delicate pastry — one professional convection oven across your full recipe book.
Common recipes on this platform: baguette, ciabatta, sourdough, brioche, chiffon, sponge cake, cookies, roast chicken.

3. Why R&M Costs More Than Cheap Gas Ovens — And Why It’s Worth It
Gas convection ovens run hotter and take more abuse than electric models. That is exactly where budget-brand shortcuts fail first. Here is what you actually get in an R&M gas oven that budget convection oven brands strip out:
| Component | R&M GDR-10G | Budget Brand |
| Control panel | LED micro-computer with PID, timer, steam control, 10 memory presets | Mechanical knob — large temperature error, no memory |
| Airflow | Adjustable shelf distance, adjustable side outlets, adjustable fan outlet | Fixed outlet — one airflow setting for every recipe |
| Motor | CE certified, all-copper winding, aluminum enclosure, bi-directional | Iron casing, copper-clad aluminum wire, single direction, fails early |
| Motor protection | Dedicated rear cooling vent + side vents + separate cooling fan | Exposed fan, inadequate ventilation, safety risk |
| AC contactor | French Schneider | Unknown brand, prone to electrical failure |
| Wiring | Thick copper cable with overload protection | Thin wire, no overload protection |
If you have ever replaced a convection industrial oven inside 24 months because the motor burnt out or the contactor melted, this is the specification difference that caused it. The wet spray system connects to your water supply through a copper tube fitting — not the plastic connector that clogs with mineral buildup in high-volume operations. Steam pulses are programmable 1–60s from the panel.

Convection Gas Oven FAQ
Q1: What is the price of this commercial gas convection oven? Contact us for factory-direct pricing — the GDR-10G typically costs less to purchase than the equivalent electric model, and runs 60–75% below branded gas convection ovens
Q2: Can it run on propane / LPG / natural gas? Yes. Factory-configured for LPG, natural gas, or propane at order time. Tell us your fuel type at quote stage — we ship pre-configured with the correct burner jet.
Q3: What is the convection function in a gas oven vs a regular gas oven? A regular gas oven heats from a single burner — bottom trays cook faster than top. A gas convection oven adds fans that circulate heated air across all 10 racks simultaneously, so every tray finishes at the same time and same color. Essential for commercial throughput.
Q4: What convection oven size do I need? The 10-tray GDR-10G (800×1100×1260 mm) fits 80–150 loaves/day or 5–8 daily service shifts. Under 40 loaves/day → 5-tray gas. Over 200 loaves/day → 15-tray trolley.
Q5: Do you offer a smaller gas model? Yes — the 5-tray gas convection oven uses the same platform in a smaller footprint.
