Straight vs. Curved Front — How to Choose

R&M offers both curved (RMXK) and straight (RMZJ) front glass in the rear-open category. The choice is about the display line and the budget.

Curved front (RMXK): The glass arcs forward, giving a wider viewing angle and a premium silhouette. Curved glass costs more to manufacture and ship. Choose curved when the display itself is a statement piece — a flagship cake shop, a hotel pastry counter.

Straight front (RMZJ): The glass is a single flat panel. The viewing angle is slightly narrower than curved, but the display line is cleaner and more uniform across a long counter. Straight glass costs less, so the RMZJ typically comes in at a more economical price point than the equivalent RMXK. Choose straight for a standard bakery counter, a second display unit, or any installation where the premium look of curved glass is not worth the price difference.

Rear-Open Service — The Staffed Bakery Standard

The rear-open format is the standard for staffed bakery counters:

Serving from behind: Staff reach cakes through the rear opening. The customer side of the case remains untouched during service — no fingerprints on the glass, no disruption to the display arrangement.

Counter placement: The RMZJ sits against a wall or back counter, with the service side facing the staff workspace. In a typical bakery layout, the display case forms the boundary between the customer area and the production area — the staff side is the working side.

Product loading: New stock is loaded from the rear throughout the day without interrupting the customer display. The rear panel opens for full access to all display levels.

Refrigerated Display at 2–10°C

The RMZJ holds the 2–10°C range — the working temperature for cream cakes, mousse cakes, cheesecakes, and refrigerated pastries. The fan cooling system keeps the temperature even across the full length of the case.

Why even temperature matters in a 1.5–2.0m case: In a long display case, the distance between the evaporator and the far end of the case is significant. If air circulation is poor, the cakes at the far end sit warmer than the cakes near the compressor — and warm spots shorten product life and cause condensation. Can this case be used for self-service?
