Front-Open vs. Rear-Open — Which Service Format Fits Your Counter
R&M makes the same display case core in four formats: rear-open (RMXK curved, RMZJ straight) and front-open (RMQKY curved, RMQKZ straight). The service format determines how staff and customers interact with the case.
Front-open (RMQKY):
The opening faces the customer side. Staff stand on the customer side of the case and lift or slide the front panel to serve.
Suits coffee shop pastry counters, café display units, and bakery counters where staff are positioned at the front — either behind the counter serving directly, or in front of a freestanding case.
The counter layout is more flexible: the case can sit freestanding in the middle of a space, with service from the customer side, rather than against a wall.
Rear-open (RMXK/RMZJ):
The opening faces the staff side. The case sits against a wall or back counter.
Suits traditional bakery serving lines where staff work from behind the counter.
Choosing: If your staff serve from behind a counter that is also the display location, rear-open is the natural layout. If your case is freestanding or your staff serve from the customer side, front-open is the right format. The RMQKY covers the front-open requirement in a curved glass profile.
Air-Duct Defogging System
The RMQKY series uses air-duct defogging — a different mechanism from the electroplating film used in the RMXK/RMZJ rear-open series.
How it works: A duct directs a stream of slightly warmed, dry air across the inner surface of the front glass. The moving air prevents moisture from settling and condensing on the glass surface. The glass stays clear for product viewing throughout the trading day.
Why front-open cases commonly use air-duct defogging: In a front-open case, the glass is the customer-facing surface and is opened frequently during service. An air-duct system is more robust to this opening cycle than a bonded film — the air flow resumes automatically after each opening and re-establishes a clear view faster.
Practical benefit: In warm, humid climates — the target markets of Africa, Southeast Asia, and the Middle East — the defogging system keeps this refrigerated pastry display case presentable through peak trading hours.
Coffee Shop and Café Pastry Display
The RMQKY is the model most commonly ordered for coffee shop and café pastry counters. The front-open format matches the way these counters operate:
The typical café layout: A freestanding pastry display case at the end of the ordering counter. The barista or counter staff stands behind the case or beside it, opens the front panel, serves the pastry, and closes the panel. The customer sees the full range through the curved glass before ordering.
Why 2–10°C matters for café pastries: Cream puffs, éclairs, fruit tarts, mousse cakes, and refrigerated desserts all require the 2–10°C range. A café that displays these at ambient temperature shortens their shelf life and risks food-safety compliance issues. The refrigerated case holds them at the correct temperature from morning service through closing.
Café chain scaling: For a chain standardizing its pastry display across multiple outlets, the RMQKY provides a consistent display format — same widths, same look, same service workflow across all locations.
الأسئلة المتكررة
What is the difference between the RMQKY (front-open curved) and RMQKZ (front-open straight)?
The front glass profile: RMQKY has curved glass, RMQKZ has straight glass. Same front-open service format, same temperature range, same widths. The curved profile offers a wider viewing angle; the straight profile is typically more economical.
Can customers self-serve from this case?
The RMQKY is designed for staff-assisted service from the front. For full self-service (customers opening the case themselves), see the open-front models in the R&M display range. Confirm your service model with us before ordering.
What is the defogging method on this series?
Air-duct defogging: a duct blows slightly warmed, dry air across the inner glass surface to prevent condensation. This differs from the electroplating-film method used on the RMXK/RMZJ rear-open series.
Is the RMQKY suitable for displaying cakes or only pastries?
Both. The 2–10°C range covers cakes and pastries equally — cream cakes, mousse cakes, fruit tarts, éclairs, cream puffs. The model is named for pastry display because that is its most common café application, but it is a general refrigerated pastry display cabinet for any product in the 2–10°C range.
What is the difference between this and the rear-open RMXK?
RMQKY is front-open (service from customer side); RMXK is rear-open (service from staff side). Both use curved glass. Choose by your counter layout and service position. The rear-open format is covered by the curved glass cake showcase.
