The Under-Oven Proofer Concept — Why It Works
The conventional kitchen layout places the proofer and oven in separate locations. Dough is proofed in the proofer cabinet, then carried to the oven for baking. In a small bakery where every square meter of floor space is occupied, this separation is a layout problem.
The undercounter proofer concept solves this by physically stacking the proofer directly beneath the oven. The proofer occupies the base position; the oven sits on top. Together they form a single proof-and-bake unit with a combined footprint roughly equal to the oven alone.
Space efficiency: One floor position serves both functions. For a startup bakery or small café kitchen where adding a full-height standalone proofer cabinet is not feasible, the under-oven configuration is often the only practical option. If you do prefer a separate unit, R&M’s boiled water standalone proofer brings the same boiled-water humidity control in a dedicated floor-standing cabinet.
Workflow simplification: Dough is proofed directly below the oven it will bake in. Moving from proofing to baking is a single vertical transfer — remove the tray from the proofer below and slide it into the oven above. No carrying across the kitchen, no temperature shock from moving between separated stations.
Load-bearing specification (XF-10A): The XF-10A has a rated bearing capacity of 0–200kg, which means the deck oven above can be placed directly on the proofer. Confirm oven weight against this specification before ordering.
XF-5AE vs. XF-5AG — Electric and Gas Deck Oven Variants
The XF-5AE and XF-5AG are functionally identical — same capacity (5 trays), same power, same weight. The dimensions differ because the footprint of a single-layer electric deck oven and a single-layer gas deck oven are different:

GDR-5P — Computer Panel, Convection Oven Match
The GDR-5P matches R&M convection ovens rather than deck ovens. At 0.8KW, it is lower power than the XF series. The computer panel control gives digital temperature display and programmable settings — a different user experience from the XF series’ knob control. It is the undercounter proofer to choose when your bake line runs on a convection oven.
Two footprint sizes are available (850mm and 800mm widths) to match different convection oven base dimensions.
Who this suits: A café or small bakery running a convection oven rather than a deck oven. The convection oven bakes bread, pastries, and rolls; the GDR-5P proves the dough in the space below.
Tray Capacity and Output — Matching the Proofer to Your Volume
5 trays: One full load of the proofer fills one bake cycle in a standard single-layer deck or convection oven. For a bakery producing 1–3 bakes per session, 5 trays is the natural match with an undercounter proofer sized to your volume. Load the proofer with a full tray set, proof, transfer to the oven, reload the proofer with the next batch while the first bakes.
10 trays (XF-10A): Double the tray capacity means two full oven loads are proofed simultaneously. For a bakery with higher throughput, this reduces the gap between proofing completion and oven availability — always having a ready second batch when the first comes out.
Small and Countertop Proofer Context
The XF-5AE, XF-5AG, and GDR-5P are among the smallest undercounter proofer units in the R&M range. At 5 trays and weights of 20–30kg, they are also the most portable — a small proofer that can be repositioned or moved between kitchen stations if the operation grows and the layout changes.
