Why Cooling on a Rack Matters
Baked goods coming out of the oven keep cooking from their own residual heat. How they cool affects the final result:

Two versions:
- Flat rack: sits directly on the worktable or tray trolley. Use where racks rest on a surface during cooling.
- Rack with feet: the wire grid is lifted off the surface by small feet, so air flows under the rack as well as over it. Use for maximum airflow and to keep the counter clean underneath.
