Why Aluminum for Commercial Baking
Fast, even heat. Aluminum conducts heat quickly and spreads it evenly across the tray surface. The result is cookies and rolls that bake uniformly — no hot spots, no underbaked corners. It is the standard material for commercial baking trays for exactly this reason.
Light to handle. A 400×600 mm aluminum tray weighs about 1 kg. Staff load and unload racks all day; every kilogram of tray weight is a kilogram they lift per tray, per cycle.
Clean and food-safe. Aluminum is non-toxic and easy to wash. Trays rinse clean between batches, and the material does not absorb fats or odors.

Aluminum vs Aluminized — What’s the Difference

Aluminum trays — the standard choice. Lighter, better heat conduction, lower cost. Suited to deck ovens and rack ovens used in normal bakery service.
Aluminized trays — an aluminized steel tray with a surface layer that resists the scratching and oxidation aluminum picks up in busy kitchens. Heavier (1.55–2.05 kg for 400×600 mm) and more rigid than plain aluminum, with better surface durability for rough handling and frequent washing.
Which to order: if trays get knocked around, stacked wet, or cleaned aggressively, aluminized pays back in longer surface life. If you run a typical bakery schedule with normal handling, standard aluminum is the economical workhorse.
