For a 32-tray cabinet, this means loading and unloading 32 separate trays per cycle. The trolley loaded with shaped dough first cools to the retardation temperature to slow fermentation, then automatically rises to proofing temperature at the programmed time. When the proofing cycle completes, the trolley rolls out ready for the oven.

All three models are designed around standard 400×600mm trays — the universal standard for European-origin commercial bakery equipment. If you are already using standard bakery trolleys and trays, they are likely compatible with this cabinet.

Production Line Integration

The roll-in retarder proofer sits at the junction of shaping and baking in a high-volume bread production line:
