Where a Bakery Trolley Fits in the Workflow
A bakery trolley (rack) is the standard way to move trays through the production flow:
Loading and proofing. Dough is loaded onto trays, the trays go onto the trolley, and the loaded trolley rolls into the proofing area. Everything moves together — one trip instead of carrying trays one by one.
Oven loading. Rack-oven bakeries roll the loaded trolley directly into the oven. High-temperature trolleys are built for this: stainless steel that holds its structure through repeated oven cycles, with blade supports sized to the tray.
Cooling and storage. After baking, the trolley rolls to the cooling area, then to the dispatch bay. Baked goods cool on the rack and stay on it until packed.
The cost case: every time staff hand-carry trays, that is labor. A trolley moves 12–32 trays in one push — and pays for itself in saved trips and fewer damaged products.

Standard vs High-Temperature vs Enclosed
Standard trolleys (ST-15, ST-32): for loading, proofing, cooling and storage. Stainless construction, general bakery service.
High-temperature trolleys (ST-12, ST-16, ST-26, ST-32L): built to roll into rack ovens — the rack oven trolley. Stainless steel holds its shape through repeated heat cycles, and the blade spacing is matched to oven loading. Confirm the tray blade spacing matches your oven before ordering.
Enclosed trolley (acrylic shell): the sealed rack for finished products — keeps bread and pastries covered during display or transport, and looks clean in a retail setting.

Moisture-resistant. Bakeries are wet environments — wash-downs, steam from ovens, condensation from proofers. Stainless handles it without rusting or weakening.

Can I roll it into my rack oven?
Only the high-temperature models (ST-12, ST-16, ST-26, ST-32L) are designed for rack oven use. Check your oven’s trolley opening and blade spacing before ordering.

What is the wheel height?
